Cuban Soul Food
Bayan Ko founders Lawrence Letrero and Raquel Quadreny bring rich stories and impeccable talent to Politan Row Chicago with Clave, a traditional Cuban soul food concept by way of Miami. For over a decade, Canadian-born Filipino chef Lawrence has cooked in some of Chicago’s finest kitchens and has held executive titles at local powerhouses like Sable Kitchen and Bar at the Palomar Hotel as well as at The Waldorf Astoria Chicago. Armed with sharp skills and deep cultural roots, chef Lawrence and Raquel opened Bayan Ko, an artful blend of their native Filipino and Cuban cuisines, in the autumn of 2018, and it was rapidly named as one of Chicago’s Best New Restaurants in 2018 by Chicago Magazine.
Now, with Clave at Politan Row Chicago, chefs Lawrence and Raquel shine a spotlight on the Cuban side of things. Named after the backbone of Cuban and Latin music, Clave (pronounced ‘clah-VAY’) channels Miami’s evolution of Cuban cuisine and plays all of the hits, including the no-frills Cubano sandwich, hearty ropa vieja, and salted caramel flan.
